For this one we took Proper Pils and refermented it with a strain of Brettanomyces, let it age for 5 months, then moved it onto the spent cherries from the Cherry Sour for another 11 month rest. Earhty, funky cherries dominate the aroma with a hint of bready malt. Very light, dry and crisp with a slightly tart finish and a healthy Pilsner malt backbone. Very refreshing.
