Our last release is a Brett Saison. The grain bill is a combination of the heirloom Barke Pilsner malt showcased in Local Lager, American 2-row, and malted white wheat with a sprinkling of Vienna. It got a hefty does of Citra in the whirlpool and was primary fermented with Belgian Ardennes yeast. After primary we pitched a blend of several Brettanomyces strains and let it age for 7 months. Notes of hay, leather and earthy funk shine through with undercurrents of overripe tropical fruits, melon, and citrus. Lightly bitter and super dry on the finish.
